I did it!

As I picked tomatoes from the garden this weekend, I realized that this time we had too many. We've been able to eat through the tomatoes we've harvested, but not now. Many would go to waste. I really don't care too much because I'm not loving these Celebrity tomatoes. (I'll blame the tomatoes and not the gardener!) :) I mentioned how many I had to Holly & she encouraged me to get canning. I haven't canned on my own before- used to help mom do it when I was growing up though. I didn't want to commit and buy a bunch of canning supplies. Holly explained to me how easy it is- that I just needed the canning jars. So I figured, experimental gardening calls for experimental canning I suppose. Funny how the memories came rushing back from my childhood as I peeled skins off warm tomatoes. (Good memories, Mom.) :)I have no idea how these will taste, but I did it. The seals are popping closed as I type! :)

By the way, today it just hit me that fall is here. Dang it!! Pressure is really on now to get my summer posts done before the leaves start to fall! AHH!! Can I get by on even less sleep?! Stay tuned... :)

You go Nikki! So proud of you. That is a big accomplishment. I would love to do some canning some day. Key words "Some Day". And I would love to see the rest of your summer blogging done...just get some sleep first!

Great job Nikki! I've been wanting to do some canning too, but with my bumper crop of 1 tomato and only 1 zucchini... Hopefully I will have better luck next year! :)

You are very brave to do it by yourself! I hope they taste just as good as they look.

YEA for canning! It makes you feel so domestic doesn't it? Now you can make mom's spaghetti sauce! That's what Derek is looking forward to at least! Those tomatoes look great...what don't you like about them?

Congrats. Good job. I have never been brave enough to can. My grandma used to do it and I should have payed better attention, but when your a kid you don't care about that stuff.

Canning your own homegrown tomatoes? Impressive. I have only canned peaches, and it is so much work (especially when I did it by myself w/o my mom watching and instructing my every move) that I'm not sure I want to do it again! At least not this year while I'm still preggo. Kudos on your tomatoes. They look really good!

Wow. I seriously want to call you wonder woman!!! I don't know how you do everything and that you do everything so well!!! Way to go on the canning and I'm sure they will turn out GREAT!

Hip Hip HURRAY!!! I am soo impressed. It feels so good to have an idea and then do it right away, huh? :) Next post- Homemade spaghetti sauce! I can't believe you got 5 quarts. That is great. Just wait until Greg gets home. I wonder how he will feel about all this manual labor. Home canned tomatoes really do taste better. YOu will see! :)

Way to go! I have never canned anything ever and have found myself feeling like a bit of an imposter as a good, Mormon woman without those skills. (I'm not kidding, it's like a dirty little secret.)

Nikki- you paid attention when we canned?? I am fulfilled as a mother now. :) I love it that my girls actually practice as adults some of the things I tried to teach you as kids. Next - sewing????

Canning is one of those things I'd truly like to try but I'm so scared to! I've never canned and I don't remember my mom canning. Maybe she did, but I don't remember. I'm really impressed!

I am also terrified of canning. A few people have offered to work with me...maybe I should take them up on it!

I did freeze some tomatoes today. It's possible, but SO messy. I had tomato in every nook and cranny of my kitchen.

Looks great though! Let us know how you use them...
